BELGRADE – Commercial chains in Serbia, according to regulations that came into force at the beginning of the year, no longer have to keep eggs in refrigerated display cases, but at temperatures above five degrees, says the Veterinary Directorate of the Ministry of Agriculture and explains There is no reason to worry this will affect the quality of the food because that temperature is better adapted.

The head of the Department of Veterinary Inspection of the Ministry of Agriculture, Zoran Ivanović, says that the Regulation on the quality of the egg, which has been in force since this year, stipulates that this product can be stored at a temperature below five degrees only during transport less than 24 hours or in retail stores. facilities in less than 72 hours.

The ordinance stipulates that eggs are stored at a temperature above five degrees.

He points out that the Egg Quality Regulation came into force on January 1, but now some commercial chains have started working on a marketing campaign on how to store eggs outside the cooling system.

“Consumers have noticed before that eggs were stored in cabinets where dairy products are, the storage temperature of which is more than eight degrees, so there is practically no difference,” Ivanović said.

Remember that foods of animal origin are stored at a temperature of plus eight degrees, and fresh meats and meat products at a temperature of two to four degrees.

He added that many scientific studies have compared the ways of storing eggs, at a temperature above five degrees and room temperature, and that no knowledge has been found that the quality of the eggs has deteriorated, that is, that the cooling has an adverse effect on quality.

Specifies that sudden changes in temperature affect the condensation of moisture on the surface of the egg, which can contribute to the multiplication of microorganisms and facilitate their penetration into the shell.

Ivanović points out that food safety care starts already on the farm, adding that eggs must be marked according to the Rulebook, and that they have a specific expiration date.

It points out that consumers are conscientious and report all cases when they notice that something is not in accordance with the regulations. “Our controls have been tightened due to the current situation, we are in the field every day and we do not have any alarming information,” says Ivanović.

There were individual cases in which the veterinary inspection recalled food that was not safe or did not have traceability data.
