Arriving in our country in 2005, in 2006 T. Lauvray began working as a confectionery technician-consultant in the retail chain “Iki”.

“I admit it – I feel encouraged when I return. Still, I understand that it has been a long time since I worked here. Today, the baggage of my pastry experience is much greater, I gained more knowledge about the favorite products of Lithuania. Naturally, I am now setting myself more ambitious goals than a decade ago. Furthermore, the retail network has changed since then: the confectionery products it offers are of extremely high quality and have an even wider range, “Lauvray said in a press release. .
My favorite products are French tartlets
The pastry chef from France admits that during the year he lives in our country, he noticed significant differences between the Lithuanian and French confectionery options.
“From what I have noticed, Lithuanians are big fans of pastries. Undoubtedly, perhaps this is also due to its huge selection. The company’s chefs provide more than 40 types of cakes in Iki stores alone. And most importantly, we try to meet everyone’s needs: you can choose as much a fresh and light consistency as a traditional chocolate or caramel cake. In addition, the constantly updated range of confectionery products includes healthier alternatives: products with less sugar, without lactose. It is not surprising that such a wide selection attracts so many pastry fans, ”smiles T. Lauvray.
Returning to the position of technologist in the retail chain, T. Lauvray says that his own weakness, admiration for French confectionery, is seen as a reservoir.
“I will not argue that I have great love for this product. Its flavor always reminds me of my childhood, my hometown, because the tart is a very familiar cake. I also like to make flour dishes, especially buns, whose variety of flavors inspires me as a pastry chef ”, says the French.

Lauvray says he already has ideas on how to surprise the Iki confectionery regulars.
“I will not hide, the further, the more difficult it is to surprise people with various confectionery news. However, I must admit that I already have certain visions, “says the pastry chef.
