The canteen located in Vilnius Petras Vileišis Progymnasium also registered discrepancies in the weight of some dishes (for example, carrots, celery, apple salad with yogurt, which the inspectors took from the table, weighed 84 g, although the recipe stated 100 g, almost twice as much as is added to pancakes, curd than indicated in the recipe, etc.).

Although the requirement that food served as hot food must be kept at a temperature of at least +68 ° C before consumption is not new and should be known, the inspected canteen detected non-compliance with the temperature regimes (e.g. + 46 ° C).

The inspection also identified the possibility of cross contamination when raw meat inventory is kept on the same rack alongside cutting boards and knives for heat treated raw material. Self-monitoring records were found to be filled in incorrectly (i.e. refrigerator log book records refrigerator number rather than temperature), worn part of food handling equipment (damaged Teflon pot surface, gaskets seal seal in fresh meat store, door worn). There were not enough hand dryers in the production facilities.

At the school’s food handling facility, soup waste was dumped into a sink where dirty dishes were kept, and the sink got clogged with food residue accumulated during inspectors’ inspection. The storage capacity of other waste was exceeded.

Due to the violations identified during the inspection, the company that organizes catering in Vilnius Petras Vileišis Progymnasium will be subject to administrative penalties.

The use of non-conforming products used in infant feeding is prohibited.

Specialists point out that companies that organize meals for educational institutions must strictly follow the requirements of the Description of the Procedure for the Organization of Meals and apply more strict hygiene measures than usual due to the constantly changing epidemiological situation of COVID-19 – provide information on the need for personal hygiene, properly clean and disinfect tables, chairs and other equipment, frequently touched surfaces, to ensure that students are at least 1 meter away from each other when standing in lines , etc.
