The pride of traditional cuisine – zeppelins or a plate of potatoes with a variety of spices – is often found with relatives who come to the guests. If you want to try something new, all you need are familiar potatoes and foods found in any Lidl store, which will enrich differently prepared potato dishes with unfamiliar flavors.
For those looking for inspiration on what to make delicious with fresh potatoes this year, we share three proven recipes.
Instead of herring with potatoes, potatoes stuffed with herring
You will need (3 people):
- 5 medium potatoes
- 2 tablespoons olive oil
- 1 onion and carrot,
- half couple
- 1 salted herring fillet,
- 1 tablespoon of mayonnaise
- a pinch of salt and black pepper,
- 100 g of fermented cheese.
How to produce
Preheat the oven to 200 degrees. Wash the potatoes, fork in several places, grease with oil and bake in a preheated oven for about 45-60 minutes until soft.
Prepare the herring filling: cut the onion into small pieces and sauté until golden brown. Add the grated carrots, a couple of thin slices and sauté for a few more minutes until the vegetables are soft.
Mix the vegetables, the herring fillet cut into small pieces and a tablespoon of mayonnaise. Season to taste with salt and pepper.
Cut the baked and slightly cooled potatoes in half lengthwise into two pieces. Peel them, leaving the walls of the potato “bowl” about 0.5 cm thick. Mash the peeled potato batter with a fork and toss with the herring filling. Fill the potato halves with the prepared herring filling. Sprinkle with grated fermented cheese.
Bake in a preheated oven for about 20-25 minutes until the filling has warmed up and the cheese has melted and browned well. Serve hot.
Potato “hedgehogs” will remember childhood, but will surprise with a new flavor.
You will need (2 servings):
- 300 g of potatoes (boiled),
- 1.5 glasses of flour,
- 1 egg,
- pinch of salt.
How to produce
Grind the potatoes in a meat grinder or grate. Beat the egg, add salt and mix everything. Add the flour and knead the dough. You can adjust the amount of flour a little, it is important that the dough does not stick to your hands and is not too hard.
Divide the dough into several parts. Wrap a rolling pin from each part on a floured surface and cut into small pieces. While still dusting with flour, rub the pieces of dough one by one through the inside of the fine grater: add a piece of dough to the rack and slide lightly with your thumb.
Put the prepared “sea urchins” in boiling salted water: cook for 7-10 minutes. Take the boiled ones out of the water and serve them with your favorite sauce. Suitable for sour cream, melted butter, and mushroom sauce or whatever you want.
Salmon and potato soup will warm you up on cool autumn afternoons
You will need (for 4 servings):
- 3 bigger potatoes
- 200 g of salmon fillet,
- 150 ml of skim cream
- 1 carrot and onion,
- cauliflower quarter,
- 40 g of butter,
- 1 bunch of dill,
- half a teaspoon of salt
- a quarter teaspoon of ground black pepper.
How to produce
Peel an onion and chop it as finely as possible. Peel a carrot and cut it into thin slices. In a saucepan, melt the butter over medium heat, add the chopped onion and fry until soft, then add the carrots. Fry the vegetables, stirring constantly, until the carrots are soft.
Peel the potatoes, cut them into cubes and place them in a pot with the vegetables. Bake for a couple of minutes.
Add 500-700 ml of warm water to the pot and cook together for about 10 minutes. Divide the cauliflower into inflorescences and add to the soup and cook for another 5 minutes.
Cut the salmon and add it to the soup. After seasoning with salt and pepper, cook for about 5-7 minutes. At the end, add the cream and add the chopped dill.
