Spanish potato omelette
According to V. Juodkazienė, Lithuanians are probably one of those who knows the most potato recipes, but even we can surprise ourselves with dishes from other countries with this vegetable. Places like this are the Spanish potato tortillas. It only requires a few products: potatoes, onions, eggs and cooking oil. The food expert says it’s a great idea for a hearty, fun, and inexpensive dinner that everyone in the family will enjoy.
You will need (4 people):
- 6 potatoes
- 6 eggs
- 1 large onion

- Frying oil
preparation:
Peel the potatoes, cut them into slices and mix with a pinch of salt. Cut the onion and place with the potatoes in the pan. Add enough oil to almost overwhelm the potatoes and cook over medium heat for 20 minutes. In a separate bowl, beat the eggs, mix with a pinch of salt. Then take the potatoes from the oil and add them to the egg mass. In a clean skillet, add about 0.5 cm of oil and add the potato and egg mass. Bake for 5-7 minutes on medium heat until the tortilla hardens. Turn it over while placing the plate next to the pan. Carefully push the inverted omelette off the plate into the pan and bake for another 5 minutes. Flip the tortilla back into the oven again, only this time leave it on the plate. Wait for it to cool down a bit and serve.
Pasta with “Bolognese” lentil sauce
The food expert suggests paying attention to lentils as well. According to her, these are saturated and rich in fiber and protein. Due to these properties, lentils are one of the most used alternatives to meat by vegetarians.
“Lentils make a variety of dishes, so you can add them to the dinner menu like meat. I suggest starting with the Italian Bolognese sauce. Replace the meat traditionally used in its production with lentils and season the pasta with this sauce or eat it with rice. Perhaps no family member will notice that the sauce is made with lentils instead of minced meat, “says V. Juodkazienė.

- 300 g of pasta
- 1 onion
- Red peppers
- 1 large carrot
- 3 handfuls of cherry tomatoes
- 2 glasses of boiled brown or green lentils
- 1 glass of tomato puree
- 1 onion

preparation:
In a deeper skillet, heat the oil and fry the minced onion until smooth, then add the minced garlic, paprika, grated carrot and simmer for about 5 minutes. Then put the chopped tomatoes and lentils in the pan, add the spices and mix everything. When the vegetables are soft enough, add the tomato puree. Cover with a lid and simmer for another 10 minutes. Pour the sauce over the cooked pasta and season with grated cheese and vegetables.
Mexican green chili soup
The food expert says that the cheapest dishes do not necessarily have to be made only from vegetables. V. Juodkazienė says that it is possible to make a cheaper but at the same time exotic dish with meat. For example, chicken thigh fillet is a versatile, easy and quick to make product. The food expert suggests trying a simple but boring green chili soup recipe with chicken thigh meat.
You will need (4 people):
- 6-8 pieces of chicken thigh meat
- 500 g canned tomatoes
- 300 g canned beans
- 200 g spinach
- 1 onion
- 3 garlic cloves
- Cumin, hot pepper powder, sweet pepper powder
- Chopped cilantro
- Frying oil
preparation:
Chop the onion, garlic and chicken separately. Heat the oil in a saucepan, fry the onion, add the garlic and other spices, the chicken and cook everything for 2 minutes. Add the tomatoes, beans and simmer for about 5 minutes. Then add water, reduce the heat, and simmer for about 15 more minutes. Add the spinach to the end of the stew. Serve decorated with coriander.
American salmon fillets
V. Juodkazienė also advises to take a closer look at the shelves of canned goods: here many cheap and delicious dishes can be made from the goods.
“Try canned salmon: You can not only cook soup, try a salad, but also make delicious salmon steaks. Americans who like these cakes traditionally serve them with mashed potatoes and peas,” says the food expert.
You will need (4 people):
- 500 g canned salmon
- 1 onion
- 4 v. š. to roll breadcrumbs and buns
- 2 eggs
- 4-6 years š. liquid to preserve salmon
- 1 a. š. mustard
- Chopped parsley
- Salt pepper
- Frying oil
preparation:
Cut and fry the onion until smooth. Then place the onions in a large bowl with the salmon pieces, add the breadcrumbs, beat the eggs, and add the liquid from the salmon. Lightly salt and season with pepper and mustard, add the chopped parsley. Stir well and leave for about 20 minutes for the bread crumbs to swell. From the resulting dough, form fillets of the same size, re-roll them into breadcrumbs and bake in a skillet over low heat. Serve still warm.
