While the big winter holidays will be different this year due to the tightening of the quarantine that has gone into effect, the country’s best-known food bloggers are encouraging the creation of a more modest family vacation with delicious food. For those who want to combine tradition with modernity, you are invited to try several different variations of white mix recipes.

White mix has always been associated with an important occasion for Lithuanians, when a table is prepared for various gatherings with family or friends with various festive dishes. Boiled potatoes and carrots, pickles, hard-boiled eggs, peas, and mayonnaise often remain the traditional ingredients in the white mix recipe. Still, different families often refine the dish with other favorite ingredients that their parents or grandparents added to the dish.

The improvisations of this dish are also shared by renowned food bloggers in the country, who constantly surprise their followers with exclusive recipes: “Sunny kitchen”, Indrė Trusovė and “On a wooden table”. The women offered three gourmet interpretations of the white mix, in which some traditional ingredients become a perhaps unusual but extraordinary choice.

Asta Černė, hidden under the nickname “Saulėtos virtoje”, made a classic white mix with crispy French fries and carrots, radishes, peas and chicken. He also made a flavorful mayonnaise based sauce with various ingredients.

Kristina Pišniukaitė Šimkienė, better known as “On a Wooden Table,” improved the recipe for the white mix by adding cheddar cheese, radish, toasted bacon and mango flavored mayonnaise. According to her, the freshness of the peas in this dish is complemented by brighter flavors, so the mixture deserves the trust of foodies.

Indre Trusovė also improvised gourmet in a traditional white mix, bringing a bit of modernity. His dish surprises with ingredients such as quail eggs, zucchini, spinach. According to the food blogger, while her husband and daughter always want traditional white mixes for Christmas, this time, along with other holidays, there will be a more modern dish on the table, according to the press release.

White mix “Sunny Kitchen”

Will need:

For chicken: 300 g of chicken breast, 2 tbsp. š. olive oil, 2 cloves of garlic, 1 tbsp. š. salts, 1 tbsp. š. freshly crushed black pepper, 1 tbsp. š. ground smoked peppers, 1 tbsp. š. dried rosemary, 1 tbsp. š. dried thyme.

For fried vegetables: 500 g of small potatoes, 2 carrots, 3 tbsp. š. olive oil, 5 garlic cloves, 1 tbsp. š. chopped fresh or dried thyme, 1 tbsp. š. chopped fresh or dried rosemary, a pinch of salt, a pinch of freshly crushed black pepper.

For the mix: ¼ red onion, 5-7 radishes, 200g peas (frozen).

For the sauce: ½ glasses (125 ml) of mayonnaise with dill, ½ glasses (125 ml) of plain yogurt, ½ lime juice, 2 tbsp. š. mustard, a pinch of salt, a pinch of crushed black pepper.

Sunny Kitchen White Mix

Doing:

Prepare the chicken. Preheat the oven to 200 ᵒC. Drain the chicken. Sprinkle with olive oil and rub on all sides with finely chopped garlic and spices: salt, pepper, smoked paprika, dried herbs. Let stand until the vegetables are ready.

Prepare fried vegetables. Shave the carrots, cut them into slices. Wash the potatoes and peel them well, cut them into four parts (slices). Put the vegetables in a bowl, sprinkle with olive oil. Add the finely chopped garlic cloves, season and mix well so that all the potato slices are covered with a mixture of oil and spices. Place the vegetables on a baking sheet next to the chicken.

Bake the chicken and vegetables in a preheated oven for about 20-25 minutes until the vegetables are tender and the chicken is cooked (its internal temperature should reach 72 ᵒC). Cold.

Arrange fried potatoes and carrots, diced or grated fried chicken, peas, and radishes on plates. Top with finely chopped red onions.

Mix all the ingredients for the sauce. Sprinkle generously with vegetables and chicken and serve.

White mix “On a wooden table”

Will need: 400 g of frozen peas, 100 g of radish, 2 eggs, 150 g of cheddar cheese, 150 g of cold smoked bacon, 3 tbsp. mayonnaise, 2 tbsp. š. Greek yogurt, 1/2 tablespoon. š. garlic powder, salt, pepper.

Doing:

Fry the bacon in a pan, cook the hard-boiled eggs, chop the radishes, dice the hard-boiled eggs and cheese. Put everything in a bowl, mix with mayonnaise, yogurt and spices.

Indrė Trusovė White Mix

Will need: 8 quail eggs, 2 large potatoes, 2 carrots, palm-sized zucchini, 200g canned peas, 2 large pickles, a handful of spinach, 2 tbsp. š. mayonnaise, a pinch of salt, black pepper.

Doing:

Boil the potatoes and carrots in their skins. After cooling, peel and cut into small cubes. Slice the zucchini and steam it in the steamer or you can simply boil it.

Boil the quail eggs, chop. Peel the spinach with hot water, chop finely. Cut the pickled cucumbers into cubes. Mix everything together with mayonnaise, season with salt and pepper.
