Michelin apologized for the “Russian borscht”

The restaurant guide, who classified Ukrainian borscht as Russian cuisine, apologized for “gastronomic recklessness with an undesirable political flavor.”

The Ukrainian Embassy in France explained to the representatives of the Michelin restaurant classification that borscht is a Ukrainian dish, and not Russian, as they had previously said. This was announced on Wednesday, December 23, by the embassy press service.

“We spoke constructively to Michelin about borscht in Moscow restaurants. We received an apology for” gastronomic neglect with an undesirable political flavor, “the message says.

They also pointed out that Michelin will now call borscht in Russia “variations.”

“We are working on the launch of the Michelin gastronomic guide in Kiev,” the embassy concluded.

The day before it became known that the Michelin restaurant classification classified the Ukrainian borscht as a dish of Russian cuisine. This was stated in a press release posted on the Michelin Guides website.

As a reminder, in October, the expert council under the Ministry of Culture recommended including the culture of Ukrainian borscht cuisine in the National List of Intangible Cultural Heritage Items of Ukraine.
