French food guide Michelin corrected the post about Moscow restaurants where borscht was mistakenly called a Russian dish.
French food guide Groupe Michelin apologized for posting about Moscow restaurants, where Ukrainian borscht was called a dish of Russian cuisine, and corrected the mistake. The Ukrainian Embassy in France announced this on Facebook on December 24.
And about the borscht. Yesterday, having received news about the launch of a Michelin-starred gastronomic guide to Moscow restaurants serving Ukrainian borscht, we spoke for a long time with our contacts from Groupe Michelin. The conversation was constructive. The company management apologized for “gastronomic recklessness with an unexpected political connotation”, – said the embassy.
The original version of Michelin’s message, which spoke of “first emblematic national dishes of Russian cuisine: borscht and rassolnik”, was corrected after an appeal from the embassy.
“Now” in the culinary scene in Russia, they offer vegetable and spicy dishes that are appreciated by gourmets, in particular pickle, as well as borscht in its possible forms and variations, “the embassy quoted in a new text in a publication from Groupe Michelin.
The embassy also said they have started work on a gastronomic guide to Michelin-starred Kiev restaurants.
“Groupe Michelin enthusiastically accepted this idea, and especially the invitation to visit Ukraine and taste authentic Ukrainian borscht. To eliminate all questions. Borscht is ours,” said Ukrainian diplomats.
Michelin is the most famous and influential restaurant ranking that has been around for over 100 years. Establishments are rated one to three Michelin stars based on anonymous restaurant critic reviews. The appearance of certain restaurants in the Michelin ranking generally dramatically increases their prestige and popularity.
Borscht, which Michelin mistakenly called Russian, is a traditional soup in Ukrainian cuisine. Its various variations are prepared in Belarus, Russia, Moldova, Poland and Lithuania. In October it became known that the preparation of borscht will be included in the National List of Elements of the Intangible Cultural Heritage of Ukraine.
