Skånemejerier has been removing mold from cheeses for more than ten years, sources say.

Customers who asked Skånemejerier about homemade cheese have received extensive responses. Among other things, the company writes that “mold removal in domestic cheese has not occurred since February this year.”

But a source with a good knowledge of the business confirms that the cheese was brushed later this year.

Skånemejerier has acknowledged that there were problems with mold in 2019.

Now the company writes that the photographs showing pallets with moldy cheeses were taken in 2019, and that Aftonbladet “confirms” it.

The information is incorrect. The photos were taken this year, and the cheese-brushing movie clip included in the 200-second report was taken after the summer of this year.

In responses to customers, Skånemejerier also writes that “There are therefore no health risks with homemade cheese. This is confirmed by the National Food Administration ”.

ICA has provided similar information to its clients. Just days after the food chain stopped being sold, the cheeses were put back in the refrigerator.

In a printed message to customers that was installed in stores, ICA wrote:

“The National Food Administration confirms the supplier’s statement that there has been no risk from the products in the store.”

But Petter Jonsson, department head of the National Food Administration, tells Aftonbladet:

– We can never confirm that the food produced is safe. It is the responsibility of the company itself.

Sources who have held various positions at Skånemejerier for several years testify that brushing has been incorporated into a system for a long time and that it is not just about household cheeses.

A former employee says:

– There was a lot of brushing on all mold infested cheeses. The brushed cheeses were sold in large batches. They were sold cheaper and everyone wanted to raise prices. This has been going on for more than 10 years. All cheese is handled in this way, that is, if it has mold, it is brushed.

Another former employee says:

– The machines where the cheese is produced are very dirty. There was no way to clean them. They went all day and it was more quantity than quality. The machines did not have time to dry and they did not have time to clean. I was just driving.

According to a transparent source, this is one of the cheeses that, instead of being discarded, was sent to a foundry that produces soft cheese.

What kind of dirt was that?

– Black mold, bacteria that has come during a full day of production. There will be a lot of dirt that will settle both on the tracks and on the tools and especially on tools such as knives. Cheese that is too moldy is sold whole to foundries, packaged cheese that is molded into the package is poured into larger cartons that are also sold for melting. – It is sold in the Swedish market, to the largest grocery stores.
