The initiator of the idea, the director of the Roma musical theater “Sare roma”, Istvan Kvik says:
“I would go so far as to say that there is no analogue not only in Lithuania, but also in all of Europe. As much as I traveled, as much as I was interested, I did not find a place where I could taste exactly the dishes of Roma culinary heritage. And our Dishes, believe me, are truly exceptional: No other nation has had as many opportunities to enrich their culinary heritage as the Roma. After all, our nomadic lifestyle is a great asset, when we travel from one country to another, from one country to another. Another, we were able to learn the most delicious recipes, see the most sophisticated cooking methods, learn the secrets of the most delicious dishes … And what can be done by adding gypsy wit, your own mysteries, or perhaps even magic, transmitted from Generation to generation? Istvan laughs. “So, with the help of Chef Ruslan Bolgov, we have created a menu that includes Goulash from Rome, Saviyak from Pie from Rome, Humer Soup from Rome and other traditional dishes. They are iconic from Rome, but we also offer what we have gathered from all over the world: you can try pizza from Rome, and a burger made in the Romani style, and gourmets will not be disappointed either: we have dishes decorated with gold. We are rome! István smiles.
“The road to this day has been really difficult,” Istvan said seriously. – “When we opened the Roma restaurant, we not only wanted to present our dishes to the public, but also solve social problems: we employed Roma people. I would especially highlight our young people: they are receptive, they burn with the will to work, they reveal their nation from the good side and, with their honest and diligent work, they break the stereotypes that spread in society. They are young, hardworking and have the courage to be proud of being Roma. ”
Now that many catering establishments fell after the quarantine period, it had to be quite difficult to open. “We appreciate the support and contribution of the Vilnius City Municipality, the Department of National Minorities under the Government of the Republic of Lithuania and the Agency of the European Social Fund. This help is invaluable, because the beginning is really very difficult and without support we would hardly have been determined to implement this idea, ”says Istvan.
The true Rome cannot do without music, without the guitar, without the sound of the violin. “Oh, no music!” István smiles. “Few people know this, but Rome jazz is exceptional, and we also have many contemporary music creators, great musicians, and performers in our nation. We will try to give visitors the opportunity to familiarize themselves with the diverse and interesting music performed by the Roma, for so there will be small concerts that start every Thursday. We will also give visitors surprises that I don’t want to betray now, “says Istvan.
“I believe in our success and invite you to immerse yourself in a culinary journey around the world, where each dish is created with specific Romani wisdom, a slice of hot music and fire, and necessarily a sip of love and passion,” invites Istvan. . “Then I can safely say, welcome to the GYPSY culinary brunch, come on, Ai da!”
