The pastry chef, who has been living and working in Lithuania for almost a decade, says that he carefully checks the composition of the desserts, selects the highest quality ingredients, and strives for a balanced result. Lovers of sweets, chocolate or caramel, as well as the freshest, fruit or berry cakes will like the cakes created by him.
“When creating this spring news, the essential criterion was harmony: taste, appearance and naturalness. We chose only the highest quality ingredients: fruits, berries, dairy products, which is best. We also think about children, to that desserts were not only a “sugar bomb” for them, but also a certain value. As a result, for example, some tartlets come with an impressive amount of berries. On the other hand, we all know what attracts children: the colors and their favorite ingredients, which are familiar to them. Less sugar is another criterion that has been strictly adhered to in the development of the new Iki confectionery. According to the interlocutor, it is gratifying that supermarkets are responding to the recommendations of the World Food and Health Organization (WHO), taking into account the need of consumers to reduce sugar consumption.
“We use as much fruit puree as possible, which is a natural sweetener, so these desserts are at least some healthier steps. We also look for other solutions. For example, on the basis of some cakes and tarts, we do not use cookies. , masa, but grated dates, ”says Thierry.
Desserts dedicated to vegans
For many years now, “Iki” has ensured that there is no shortage of options for vegan diet promoters in their range. “This spring we created a Vegamour tart with mango and pistachio cream. The dessert base is carefully combined with dates, almonds, sunflower and coconut oil. Pistachio and mango summer cream sweetened with natural agave syrup and lemon juice.

Another novelty is the “Vego” currant cake. Its base is the same as that of nettles, and the sweet and sour red currant cream with a loose texture, combined with black currant jelly, gives the cake an intense flavor of berries and the cream of cashew nuts and various seeds a pleasant coolness.

In creating these 10 news items, Thierry was mainly inspired by the best traditions of French pastry: “We want to offer Lithuanians fresher and smoother flavors and a variety of cakes with a berry or berry flavor.
