Without a doubt, the main uniqueness of bubble tea is the boba pearls that explode in the mouth. They are made from tapioca flour, which in turn is derived from the root of the cassava plant. When making bubble tea at home, you can use pre-made tapioca pearls to make tea, or make this flour yourself.

Homemade bubble tea with milk

Ingredients (for 2 glasses):

  • 2 ¼ glasses of boiled water;
  • 2 ¼ of tea. spoon favorite teas from black or green tea;
  • 0.5 glasses of brown sugar;
  • 0.25 glasses of water (for syrup);
  • a sliver of milk;
  • a couple of handfuls of ice cream.

tapioca pearls (if you make them yourself):

  • 1 cup of tapioca flour;
  • ⅓ cup of water;
  • ¼ cup of brown sugar;
  • ¼ of tea. spoon black edible paint.

Doing:

1. In a kettle or French press, pour the tea slightly below 100 ° C and leave for 5-6 minutes. Then pour the tea into a separate container and chill in the refrigerator.

2. While the tea is cooling, begin making tapioca pearls. Pour the water into a saucepan over medium heat, add the sugar and mix well. While the batter is heating up, add the food coloring and stir again. When everything is boiling, add half a cup of tapioca flour, mix until the batter thickens and becomes sticky. Turn off the heat and add the remaining flour to the dough; spread it evenly with a spatula.

3. Next, place the resulting dough on a clean worktop and knead well into a smooth ball. Then thread an elongated cord and cut it in half. Knead these two parts into even thinner and longer cords. Then cut them into small pieces. Then roll each one toward the ball.

4. Put the prepared tapioca pearls in boiling water and cook for about 15 minutes. Turn off the heat and let them sit in the water for about 5 minutes. Then remove them with a strainer and let them cool.

5. Once the tea and tapioca pearls are prepared, the syrup can be made. In a skillet over medium heat, pour a quarter glass of water and melt the brown sugar. After the sugar mass has boiled, boil the syrup for another 2-3 minutes. Then remove the pan from the heat and let the syrup cool a little, but not too much. Then add the cooled tapioca pearls and mix well until coated with the syrup mass.

6. Finally, the tea remains to be served. To do this, you can put tapioca pearls covered with syrup in a glass or mug, and if you want it sweeter, add a little more syrup. Then add the ice cream, pour in all the cold tea and a slice of milk. Making this bubble tea can become a relaxing ritual, after which the most fun is enjoying a refreshing drink.
