Vilma Juodkazienė, a food expert at retail chain Iki, notes that Lithuanians are increasingly inclined to experiment and replace traditional zeppelins with vegetarian or even vegan alternatives.

“True meat fans of the traditional zeppelin probably won’t change a thing, but those who don’t eat meat have been making curd zeppelins for a long time, and now we have even more variations: Zeppelins with soy, mushrooms and vegetables are conquering our kitchens. The traditional crunchy sauce can also be replaced with a healthier alternative to roasted ginger. Trust me, it will be difficult to tell if you are eating vegetarian crackles, “says V. Juodkazienė.

For a long time, not only zeppelin sauces or fillings, but also potatoes were considered a not very healthy product. Still, they shouldn’t be ruled out. According to V. Juodkazienė, potatoes are rich in substances beneficial to health and the most important aspect determining their absorption is the method of preparation.

Potatoes are rich in vitamins B, C and E, enriched with potassium, phosphorus, magnesium and iron. Do not forget that the best elements are preserved by boiling the potatoes with the skin, but even if they are peeled and prepared correctly, some of the beneficial properties can be preserved.

“Boil the potatoes in water or bake, the most important thing is not to use fat. If you fry a lot of oil in the potatoes, you will do more harm than good, because it is the fat, not the potatoes, that makes you fat. Potato starch, which is converted to sugar in the body, should not be feared either, just enjoy it in moderation, ”says V. Juodkazienė in a press release.

On the occasion of World Zeppelin Day, a food expert offers to make healthy zeppelins and presents two original recipes.

Zeppelins with soy and vegan crackling sauce

Will need: 10 pcs. green and 3 pcs. boiled potatoes; 1 package of minced soy meat; 2 pcs. onions; 1 pc. ginger root; Tablespoon of melted ghee butter; Greek yogurt or other low-fat yogurt without additives; Salt pepper

Peel, grate and peel the potatoes. Do not spill the drained liquid; Wait a moment for the starch to set, drain the liquid and add the starch. Mash the boiled potatoes and add to the total mass, salt and knead well. At this time of year, potatoes have enough starch, but if there are younger or less starchy potatoes, add more.

Fry an onion for the filling, put the soy soaked in water in the pan (follow the manufacturer’s instructions on the label), salt, add pepper and sauté a little.

Roll out the zeppelin batter, place the filling in the center, fold the cake in half, press and form the zeppelins. Put the formed zeppelins in boiling salted water, cook for about 20-25 minutes. It is very important that the pot is large; Zeppelins should enjoy the cooking process when they’re loose.

Cut the ginger into small squares so that they have the shape of a crunchy. Heat the ghee butter, fry the ginger, then add the onion and fry until golden brown. Spice with salt and pepper. Serve the zeppelins with ginger sauce and low-fat yogurt.

Zeppelins with curd and mint

Will need: 10 pcs. green and 3 pcs. boiled potatoes; 200 g of curd of the desired fat; 1 pc. egg; 20 g of butter; 1 tablespoon of sour cream; Mint leaves; Lean yogurt; Salt pepper.

Prepare the mashed potatoes as described in the first recipe. Crush the curd, add the egg, butter, sour cream, salt and pepper and finely chopped mint leaves. Form zeppelins, cook for about 20-25 minutes. Serve with low-fat yogurt or sizzling ginger sauce.

Delicious, complete and healthy zeppelin days!
