A new rooftop bar is scheduled to open in Cork City in the next few days.
It may seem like an unusual time for a new bar to open, with the grand opening amid Covid-19 restrictions, but Sophie’s owners at the Dean Hotel will be counting on a cocktail of local, international and Irish vendors. flavors and a spectacular view of Cork City to help them take off.
Sophie’s will be located on the sixth floor of the Dean Hotel on Horgan’s Quay, which is part of the new HQ Development of offices, hotels and retail stores in an area adjacent to the city’s train station.
The bar is the sister bar / restaurant of the Dublin city center establishment of the same name, which was at the center of last year’s ‘Swing-gate’ controversy involving the former TD of Dún’s Fine Gael Laoghaire, Maria Bailey.
Ms. Bailey fell from a swing on the bar and allegedly injured herself. He later took a personal injury action against the Dean Hotel, in which the bar is located.
In circuit court proceedings, it accused the hotel of negligence, as the swing was unsupervised at the time of the incident in 2015, the year before TD was elected, and no instructions on using the swing had been provided.
He later dropped the case.
The new bar will seat 150 people and features a reclaimed wood roof, a wood-fired pizza oven and two covered and heated outdoor terraces, both with views of the River Lee.
Like her Dublin counterpart, Sophie will host indoor swings, which she says are perfect for taking pictures.
Their menu, described as ‘New York inspired by Italy’, will include many local dishes and vendors, including Castletownbere crab, butter and yogurt from Glenilen Farm in Drimoleague, and cured meats and cheese from Gubbeen Farmhouse.
Ian Madden, general manager of Sophie’s at The Dean Cork, said the menu would combine the best of “international and Irish flavors”, and that the weekend brunch menu would have “something for everyone.”
Reservations at Sophie’s Restaurant Cork are now available for indoor and outdoor dining starting December 11.
Due to current Covid-19 restrictions, tables can only be reserved for a maximum of six people.
