Nikos Bakulis is 33 years old and he co-owns the third best bar in the world together with another bartender: Vassilis Kiritsis. In 2020 The Clumsies climbed three places in the ranking of the best bars in the world to number three. It has a reputation for being one of the most experimental bars and has its own laboratory, which pushes the boundaries of bartending in general.
Bakulis finds a few minutes to answer Bacchus’ questions a few days after the classification is announced. He is happy, of course, but he says that the whole “bar scene” (there is no more appropriate cliche on the subject) in Athens is at a very high level. In the top 50 there is another bar, Baba au Rum, and everything is developing.
When asked what it means to be a good bar in 2020 and to be at the level of the best in the world, Bakulis reacted quickly saying that the answer to this question is always easy and clear: you must first do what you love. Then he continues with the explanation: to be a good bar you have to be authentic, offer good drinks, a pleasant atmosphere.
“To be a human place, not to be artificial when you strive for the perfect. The most important thing in a bar is to create a mood, have fun, feel it.”
Like anything good, one ingredient is not enough, it is a combination of things. Bakulis also knows how important details are. “I travel the world a lot and I know how important the details are, the things that distinguish them. There are many very good bars, but everything in them has to be connected.”
Who is the cocktail that “signs” the bar (the signature drink)? Aegean Negroni: reflect our sea, you feel the Mediterraneanoh, explains Nico Bakulis. The drink, colored blue, also won the ranking of the best cocktail in the world for 2019.
But 2020 is different. The crisis of the Crown has left its mark on both Greece and the exodus of the people.
New at The Clumsies is a special menu created by renowned Greek chef Athenagoras Costakos. “We had food from the beginning, but now we offer different things” and this helps us keep the bar open and quarantined.
What do you expect for 2021?
Who knows. Nobody knows. It’s probably going to be a crazy year, but crazy things like experiences won’t happen yet, Bakulis thinks. Things will continue to be slow and somewhat cramped.
During it, a project created by the team two years ago received a strong boost: SO of original cocktails: recipes specially developed for home delivery bar cocktails in small glass bottles, reminiscent of a reduced version of a milk bottle. This company is doing well now, people are asking for Aegean Negroni or Clumsy Negroni for home. “It seems we knew about the virus and we were cooking,” Bakulis joked.
