The fact that the new Gault Millau Guide 2021 appears a little later than usual this year is probably less noticeable. Rather, it seems surprising that a new restaurant guide appears in this difficult year, which, as usual, has next year in its title, the qualification for it comes naturally from the current year.
“Together with our international network in Germany, France and Belgium, we discussed how we would do it this year in very long zoom discussions,” says Martina Hohenlohe, who publishes Gault Millau Austria together with her husband Karl Hohenlohe. After all, it was not easy, with the first closure in spring, “our field of activity”, as she puts it, ceased to exist. But not taking out the guide was not an acceptable option. “That would have sent the wrong signal, a death song for gastronomy.” Refraining from reviews and simply describing restaurants didn’t feel right. “Then it is not a guide.” But it quickly became clear that he wanted to approach the matter in a positive way and not look for the “fly in the ointment” as Hohenlohe puts it.
With around 30 restaurants, mainly in the ski regions, the rating was not enough because the seasons with the lockdown overlapped. They have just been described and have a question mark in place of hoods. Not to mention that the fact that their seasons were blocked would not have been correct either.
