Baker Doris Felber: “Wegg’haut is nothing”

[ad_1]

Many buy the bread in passing at the grocery store or discount stores.

Yes, we bakers let them take away our role as a local supplier. We really feel Lidl and Hofer bakeries. All you have to do is look at how many thousands of kilos of bread are on the shelves each day.

Apparently, in Vienna they throw away as much bread as they eat in Graz …

Moment! You have to look at the proportions! Graz is not even a tenth of Vienna, I don’t want to know how much fruit is thrown away, but this example of bread always comes …

How much bread does Felber have to get rid of?

None at all. We work together with Vinzi, the crypt and the light in the dark.

Is it a logistical challenge due to hygiene regulations?

Not when organizations collect bread from the branch. They do that with us.

100 percent?

The rest is handed over to a farmer in Bad Vöslau. He feeds it to his animals. Wegg’haut is nothing.

In the days of Corona, many want to do their shopping quickly and in a store. Do you feel that in your almost 50 branches?

You have to make a distinction. Our business is doing very well in residential areas again, but not in the best locations.

What about the latter?

Drops of minus 40 to 60 percent. In the Praterstern, for example, those who are now in the central office are missing, in Reumannplatz we had a large cafeteria that is now closed at lockdown and there are no tourists and employees in the city.

They have locations in Vienna and Lower Austria. Can you sell the same hand roll everywhere?

No Unfortunately. You can sell bread rolls, especially where Joseph also sells bread, that is, in the inner districts (laughs). As an alternative, we have our aromatic rolls, which are machine made but have a long dough guide. That doesn’t cost more money, but it makes them more aromatic.

Speaking of money: you have 47 locations, are you paying full rents everywhere?

I’ve been following owners for discounts since March. Only where the sales still fit, I don’t accept them. We had to close three locations, five more could follow.

How much less sales do you expect in 2020?

I won’t have the exact figures for a few weeks, but I estimate 30 to 40 percent less.

Recently, it posted a profit of 60,000 euros and reported a net profit of 1.3 million. What are the prospects for Corona 2020?

Difficult, we have a difficult situation on all sides. Our business with the hospitality and catering industry has been reduced to zero. But we do our best to get through it, we even have a management consultant to make sure nothing goes wrong.

In the spring of 2020, that is, in the first closure, 340 of 440 employees had a part-time job. How does it look today?

Without changes, the short-term working instrument works perfectly.

Are your children already in the company?

One of my sons did not get a job because of Corona and now he has to work for me. And my daughter continues to study and has to stand on the branch (laughs) …
