Some customers may soon be standing in front of the empty egg shelves in the supermarket because the increased demand cannot be met. One reason is the strict requirements in retail.
(rwa) Swiss egg producers’ association GalloSuisse emphasized in a message on Thursday that demand in the catering sector had collapsed. However, eggs may be scarce in supermarkets. GalloSuisse justifies this by saying that eggs in retail must have a minimum weight of 53 grams. If they weigh more than 70 grams, they will no longer fit in the eggshells.
Therefore, small and very large eggs are used in the food and catering industries. These could only be sold to a limited extent in retail.
In addition, the egg supply is determined by a biological production cycle. “Chickens cannot work night shifts or work in the short term,” continues the association. First, additional chicks would have to be hatched and raised, and new stables should be built if necessary. Therefore, the industry estimates demand one and a half years in advance and plans production accordingly.
Another reason is that fewer eggs are generally purchased after Easter and that is why many young herds remain stable during this time.
