Castling at Schaffhauserplatz: In Zurich, one traditional bakery replaces another

The Gnädinger bakery-patisserie has been operating at Schaffhauserplatz for almost 80 years, currently with a shop and a cafe. The reason for the abandonment of Gnädinger’s bakery, confectionery and coffee shop business is the demolition and reconstruction of the dilapidated building in which the restaurant is located, as announced by the two bakeries on Friday.

Gnädinger would have to open new branches to be able to use the bakery, which is located elsewhere, during the renovation period. Due to the restructuring, the company lacks the necessary capital: “a vicious cycle”, co-owner Yasmine Gnädinger is quoted in the message. “It is very difficult for us to leave the business behind with all its people.”

Buchmann takes over

Vegan Café Sprössling is also affected by the closure. This was only created in 2019 and is located in the former Starbucks branch also on Schaffhauserplatz.

The shop and café, as well as the Sprössling café, with a total of 23 employees, are taken over by Walter Buchmann AG from Zurich. The 111-year-old bakery company has nine branches and cafes in Limmatstadt, including Café Oberstrass. This has made headlines across the country because only cashless payments are possible there. Buchmann employs 110 people and operates a factory in Binz.

Delivery will take place in early February 2021, the main building will be demolished by the end of 2021. According to the notification, little will change for customers until then. The concept in the sales room is adapted only slightly.

Gnädinger’s hand-rolled peaks will continue to be offered at Schaffhauserplatz in the future.

A temporary solution is planned at Schaffhauserplatz for the period from late 2021 to reopening in late 2023. Café Sprössling will continue to operate as a purely vegan bistro. In the future, vegan donuts with toppings will also be offered at other Buchmann stores and cafes.

“We are proud that the Schaffhauserplatz tradition remains in the hands of Zurich,” says Buchmann CEO Dani Wehrli. The best Gnädinger products, such as the hand-rolled Gnädinger Summit, will continue to be offered at Schaffhauserplatz in the future.

Gnädinger production with bakery is closed. 34 employees are expected to lose their jobs. Some of those affected could be offered a job at Walter Buchmann, the bakeries write in the message. Employees have already been informed. A consultation phase will run until October 29.

The Gnädinger bakery-pastry shop was founded in Zurich in 1936. In 1942 Otto and Frieda Gnädinger opened the shop at the Schaffhauserplatz location. At the end of 2005, Andy and Yasmine Gnädinger took over the family business in the third generation.
