A hoppy Indian Pale Ale with citrus notes: “Deeper” is the name of the Lucerne beer, whose recipe contributed to artificial intelligence (AI). It is the first AI-based beer in Switzerland that researchers recently toasted with.
“Very exciting and very fruity”: Adrian Minnig, an expert brewer at MNBrew, called the beer produced by his microbrewery together with researchers from the Lucerne University of Applied Sciences and Arts (HSLU) and the software company Jaywalker Digital. Beer is still brewed by human hands. But the recipe was created by an AI developed by HSLU called “Brewer AI” (pronounced like a brewery).
The algorithm for creative beer recipes proceeds as follows: First, a human or AI selects the beer style, such as Indian pale ale or wheat. The digital assistant then searches a database of 157,000 international beer recipes. With the help of neural networks, it looks for patterns in these recipes and, based on the selected style, derives a list of malt types and their proportion in the brew. This is followed by suggestions for suitable hops and their cook times.
Man and machine as a creative duo
For breweries, given the hundreds of thousands of recipes, it’s extremely difficult to keep track of them, said Marc Bravin of HSLU. “Not only can Brauer AI get this description much faster than a human, but it can also provide suggestions for a beer that has never been seen before.”
The researchers are not interested in using their algorithm to exclude people from the crafting process. On the contrary: “Man and machine achieve the best results together”, the researchers are convinced.
