There are two more restaurants that join the constellation of Portuguese Michelin stars, for a total of 28. The 100 shapes, in the heart of Bairro Alto, of the media chef Ljubomir Stanisic is he Eneko Lisbondo chef Vasco Eneko Atxa, 43, who settled in Alcântara just over a year ago.
For the achievement, chef Ljubomir Stanisic stated that the distinction recognizes “the work of many years” and has a “triple meaning” in a “particularly difficult” year, marked by covid-19.
“It is an achievement after a particularly difficult year, of lack, of struggle, of hunger. It is a prize that tastes like cava and caviar in a year of bread and water”, Monica Franco, wife and advisor to Ljubomir Stanisic, told Lusa. “It’s a dream come true, the team is” very excited, “he added.
Chef Ljubomir Stanisic hosted the television show Nightmare in the Kitchen, audience leader on TVI, for several years, and in the summer he moved to SIC. The Bosnian-born chef recently went on a hunger strike with the Assembly of the Republic in conjunction with the Survive the Bread and Water movement to ask the Government for measures to help the restaurant, bar and club sectors that have been affected for the pandemic. In addition to the restaurant 100 ways, it has a bistro with the same name in Lisbon.
Eneko Atxa He already has three Michelin stars on his resume at Azurmendi, in Larrabetzu, Spain, a restaurant that is on the list of the 50 best restaurants in the world, which is an example of sustainability (twice voted the most sustainable in the world). But not only, there are two more stars, one in Eneko Bilbao and another in Eneko, in Larrabetzu (within Bodega Gorka Izaguirre). Eneko London and Eneko Tokyo have already opened. Then join the chefs The Spanish Martín Berasategui and Sergi Arola who have a star in their restaurants in Portugal.
The Basque chef indicated to be “Very happy with this achievement, which is a ray of light in this dark year. I am very happy, above all, for all the people who make Eneko Lisboa possible ”.
The rest of the Portuguese restaurants with one and two stars maintained the distinctions of last year’s guide (see list at the end of the article). Only São Gabriel, in Almancil, which ended, ceased to be part of the Michelin guide.
The (other) low-key winners
And as happens every year, the organization of the Michelin Guide does not mention at the gala the restaurants that keep the stars of the previous edition (or who loses them). However, several chefs they claim that keeping one or more stars is as difficult or harder than winning the first.
On the list of Portuguese chefs who supported it is João Rodrigues, who runs the kitchen of Feitoria, in Lisbon. “In such a difficult year for everyone, and for the restoration in particular, we were very happy with the recognition from the guide. Despite all the conditions, we maintained the same way of working, focusing on the quality of the service and the value of the product and producers “.
OR chef Pedro Almeida, head of Midori’s Japanese cuisine, with a Michelin star since 2018, indicates that “In this year full of difficulties and challenges, this is a very important recognition. It means that we remain focused on our mission to make good cuisine and bring recognition of Portuguese gastronomy to the world. We will continue to provide everyone who visits us with the experience that characterizes us and makes us the restaurant we are today, with the aim of always growing ”.
OR chef Luís Pestana from the William restaurant at the Belmond Reid’s Palace hotel in Funchal maintained his Michelin star for the fifth consecutive year. chef In statements he explained that “a year of challenges, and after a few months without being able to do what we like the most, getting this recognition for the fifth consecutive year has an even more special flavor. We had to adapt to the situation we live in, but we have never neglected the refinement and flavors that characterize us, and this is proof that our passion, adaptability and dedication are worth it ”.
Distance gala due to covid-19
In an atypical year due to the covid-19 pandemic, the Michelin Star Gala is limited to an event broadcast online from Madrid. In the broadcast, the organization of the Michelin Guide for Spain and Portugal announced the restaurants that won one or two stars, and in none of the countries were new restaurants with three stars announced: Portugal has none, Spain has 11.
Faced with some doubts about how the inspectors were able to evaluate the restaurants, due to covid-19, the director of communications and Michelin brands, Mónica Rius, assured, in statements to the EFE agency that the chief inspector José Vallés and his team of inspectors managed to secure the 2021 selection in circumstances as adverse as this year ”.
“It was an unprecedented fieldwork, with the sole objective of not missing our annual meeting with our readers, and supporting a strategic sector so hit by the pandemic”, referred.
In Spain more three two-star restaurants (Bo.TiC, in Girona; Cinc Sentits, in Barcelona, and Culler de Pau, in Pontevedra). Another 19 new restaurants have earned a star.
New Bib Gourmand Portuguese
Also announced at the Michelin Star Gala, there are new Portuguese restaurants joining the list of Bib Gourmand: Javali restaurant in Bragança, Avista, in Funchal, Check-in in Faro; Semea by Euskalduna n Porto, and O Frade, in Lisbon, are the new ones in a total of 39 from north to south and islands (see list below).
This category, launched in 1997, whose image is the Michelin doll licking its lips, distinguishes the restaurants that offer “a moment of gastronomic pleasure for less than 35 euros, with quality products, a moderate bill and a kitchen with an excellent value for money”, indicates the guide.
The sustainable stars have not yet arrived in Portugal
The novelty of the night, in addition to the new stars for Iberian restaurants and their chefs, was the launch of a new category: Estrela Verde, which distinguishes restaurants with sustainable practices. According to the Michelin Guide, this category “rewards the efforts of establishments to follow the best gastronomic practices in the field of sustainability”. 21 Green Stars were awarded, all of them in Spain. OR chef Eneko Atxa received this distinction at his restaurant in Larrabetzu, Spain.
