The king was the rolling pin but they were the queens: the Azdore family, Laura, Bárbara and Antonietta, who lately threw the dough, sautéed and prepared appetizing sauces with which to season the legendary tagliatelle or tortelli, just as “Mom had taught them “. Elvezia. And until the summer, the Elvezia di San Cristoforo tavern in Predappio, despite the closure due to the pandemic, had always performed well. People called to eat the best tagliatelle in Romagna. “We had also organized with home delivery and take away food – explains Laura, Elvezia’s daughter – but then now another closing. We are tired, it is too difficult. Having to manage the workforce, the risk of illness, no, we can’t ”.
And so, with great pain in her heart, Laura, together with her sister-in-law Antonietta and her daughter Bárbara, are saving the last things to close a business that has been historic for all the people of Forlì. The choice does not seem final but for now it seems certain that this winter you will not be able to taste the tagliatelle dell’Elvezia.
The restaurant, as mentioned, was born 50 years ago, from the desire to expand of Elvezia and Antonio, Laura’s parents. They had a grocery store that worked very well, their children were not very young and, above all, there was Elvezia’s great passion for cooking. It was instinctive to launch into the new adventure, there was no lack of courage and the atmosphere was that of a developing Italy. Thus was born the Osteria Elvezia, a family restaurant where you could eat the best traditional dishes cooked with the care and simplicity of a mother. Word spread quickly, filling the place for both lunch and dinner. And even in recent years, since the legendary Elvezia was no longer in the kitchen but instead, her daughter Laura and her sister-in-law Antonietta, people competed to come and taste noodles with meat sauce or porcini mushrooms, or tortelli with butter and sage and a special filling.
“I am 70 years old – Laura concludes – and, although my sister-in-law is younger, we are a little tired of always having to deal with new changes and new problems. We were a bit organized in the first closing, but now we’re new to trouble and we don’t even know what will happen. In the uncertainty and fear of Covid we have decided to leave. Our hearts are crying, believe me, but we can’t handle it all anymore. We hope that things will change soon and that some young entrepreneur will arrive with the desire to invest so as not to throw away everything that has been done because it would be a real shame.
