If we talk about walnuts, we mean round walnuts in Hungary, although we also have black walnuts: the National Office for Food Chain Safety (Nébih) draws attention.

Walnuts grow throughout the country. It prefers aerated soils with good water management, but also the southern slopes. It also lives in floodplains if the price drops in 6-8 days. It is not sensitive to the cold of winter and the heat of summer, but spring frosts often destroy its catkins and the lack of rain in summer also seriously impairs crop prospects.

With its powerful roots, the walnut can harvest nutrients from a large area, so there is no need for direct fertilization, in a garden that is otherwise regularly nutrient-dense. One walnut tree is enough in the home garden: they write on the page “Feed only wisely.”

Harvesting the nuts should begin when the green skin of the crop is cracked. In this case, we beat the branches with a thin stick so that the ripe walnuts fall out. Touching the trees should be gentle. The belief that walnut will grow next year and be better beaten this year is not true!

What to look for when buying?

Always ask the seller what type of nut he sells and what area it comes from, also ask him to taste.

In the case of pre-peeled, packaged products, we first check the place of origin, we look at the grains in the packaging, we only buy it if we see intact and healthy pieces. In the case of ground walnuts, we also pay attention to the place of origin and shelf life, the packaging must be intact, so we will not be surprised when we unpack it during baking.

  • signs of mold that can be seen well with the naked eye
  • we can also rely on our senses to determine if the product is stale
  • Depending on its weight, we can deduce the freshness of the walnut, since fresh specimens are relatively difficult
  • if you buy walnut casings, make sure they are not fluffy

The walnuts are further dried in a dry, ventilated place, in a layer, and then stored in a warehouse or attic, in a bag, canvas bag, or possibly in a cardboard box. The casings should be stored in an airtight box in the freezer or refrigerator.
