In announcing the sessions, Nandos said: “Did someone say cooking?
Join our head chef Tim live and directly from his kitchen as he shows you how to cook some of the Nando classics.
“We will bring the heat home with special guests.”
Singer Jgrrey was the star of the kitchen with Tim, who said the first step is to marinate the chicken in its peri peri sauce, depending on the level of spices you prefer, ideally overnight.
When marinated, start by preheating your oven to 180c, and while heating, start with the rice.
Pour the rice in a pan together with the onion and a tablespoon of olive oil and salt, then put it over medium heat.
Spicy rice recipe
- 200 g basmati rice
- 450 ml cold water
- 2 tablespoons of sunflower oil
- ½ white onion, peeled and chopped
- 2 garlic cloves, crushed
- ½ green bell pepper, thinly sliced
- ½ can of chopped tomatoes
- ½ teaspoon ground turmeric
- ½ teaspoon cayenne pepper
- ½ teaspoon smoked paprika
- 1 teaspoon salt
- Juice of a lemon
- Handful of coriander
Add your green pepper and chili, and you can add more or skip it depending on how spicy you like your rice.
Pour half a can of chopped tomatoes, stir and then add 450 ml of water before raising the heat and opening the lid of the saucepan.
As the rice boils, put the marinated thighs in the oven, and Tim will add that they will cook lightly as they will roast later.
When the rice is almost done, lower the heat and add its seasonings (turmeric, cayenne pepper, and smoked paprika) and leave on the heat until cooked.
When the chicken is fully cooked in the oven, scoop out the thighs and roast them in a skillet for the characteristic crisp Nando look.
To finish the meal, start by boiling the peas, and once they are cooked, pour in the water but leave the peas in the pan.
Male pea recipe
- 400 g frozen peas
- Water
- 1 tablespoon of olive oil
- 1 tablespoon butter
- ¾ sprigs of fresh parsley, finely chopped
- ⅔ sprigs of fresh mint, finely chopped
- ¼ teaspoon of salt
- 2 pinches of chili flakes
Add a tablespoon of olive oil and the same amount of butter, which gives the peas their creamy texture.
Chop your herbs and add them to give it the authentic Nando flavor, and finish by spreading salt and chili flakes on top.
The only thing left is to enjoy your daring DIY Nandos.
